One Pan Honey Garlic Chicken with Potatoes and Broccoli
This is one of my daughter’s favorite recipes. Tender juicy chicken baked to perfection with potatoes and broccoli.
Ingredients:
3 Tablespoons of olive oil, divided, I use tallow or lard
2 Tablespoons of Honey, 2 tablespoons of butter, Melted
2 Tablespoons of Brown sugar, 1 Tablespoon of Dijon Mustard
3 cloves of garlic, minced, ½ teaspoon of oregano, dried, ½ teaspoon basil, dried
Kosher salt, and freshly ground black pepper, 16 oz. of red baby potatoes, halved, 4 boneless chicken breasts, 24 oz (5 cups) broccoli florets, 2 Tablespoons chopped fresh parsley
Directions:
1) Preheat oven to 400 degrees. Lightly oil or coat a baking sheet/ sheet cake pan.
2) In small bowl, whisk together 2 Tablespoon olive oil, butter, honey brown sugar, Dijon, garlic, oregano, basil salt & pepper to taste. Set aside
3) Place potatoes in a single layer on prepared pan. Drizzle with remaining 1 Tablespoon of olive oil, and season with salt & pepper to taste. Add chicken breast with honey mixture.
4) Place it in oven and roast until chicken is completely cooked through. (internal temp of 165) approximately 25-30 minutes.
5 ) Stir in the broccoli for the last 10 minutes of cooking time. Then broil for 2-3 minutes until caramelized and slightly charred.
6) Serve immediately, garnish with parsley if desired.
